
Spiced Sweetpotato Overnight Oat Parfaits
Overnight oats are a delicious way to begin your day with a fiber, protein, nutrient, and vitamin packed treat. Hearty steel cut oats are combined with pureed sweetpotato, magical chia seeds, warm spices, creamy almond milk, sticky dates, sweet maple syrup, and plump raisins, and then layered with plump, sweet strawberries for added color, texture, and fresh, bright flavor. Before serving these spiced overnight oat parfaits, top each portion with chopped candied pecans, and some more shredded coconut and chopped berries. Because this treat can be prepared ahead of time, it’s the perfect snack to enjoy the following day for breakfast, lunch, or even dessert.

Ingredients
- 1 medium sweetpotato about 1/2 cup, peeled and cut into 1-inch cubes
- 1 tsp olive oil
- 2 tbsp maple syrup
- 1/2 tsp kosher salt
- 1 cup steel cut oats
- 4 tsp chia seeds
- 2 tbsp dried coconut flakes plus more for topping
- 1/3 cup black raisins
- 1 & 1/4 cups unsweetened vanilla almond milk
- 2 pitted Medjool dates
- 1 & 1/2 tsp ground cinnamon
- 1/4 tsp ground ginger
- 1/8 tsp ground cardamom
- 1 tsp vanilla extract
- 1 & 1/2 cups strawberries diced
- 1/4 cup candied nuts roughly chopped, for topping
Instructions
- Preheat oven to 375 degrees F. Toss sweetpotato cubes with olive oil, maple syrup, and salt. Transfer to a parchment lined sheet pan. Roast 30 minutes, tossing halfway through cook time.
- Combine oats, chia seeds, coconut, and raisins in a large bowl. Place aside.
- To a blender, add almond milk, sweet potato, dates, cinnamon, ginger, vanilla extract. Blend on medium-high speed until smooth, about 1 minute.
- Pour blended mixture over oat mixture. Stir to combine. Divide mixture into serving cups or jars, alternating with layers of chopped strawberries. Cover with aluminum foil. Refrigerate overnight.
- Remove oats from refrigerator. Top with additional strawberries, dried coconut flakes, and candied nuts. Serve chilled.
