Have Sweet Potatoes – Will Travel
School is over and vacation season is on. It is time for fun in the sun, for grilling great foods, playing ball, and building castles in the sand. These days everyone is looking for a way to vacation while on a tight budget. Often, dining out is one of the biggest travel expenses, so my advice is to do you own cooking. Don’t worry, this doesn’t mean you have spend all day cooped up in a tiny motel kitchenette. Vacation cooking can be a lot of fun. Whether you are staying at a villa in France, or an in-state condo, or even a campground, make sure that there is a grill on site. If not, be sure to pack a portable charcoal grill.
Then instead of splurging on elaborate dinners with kids in tow, take an outing to the local farmer’s market. There you can find plenty of fresh produce and local delicacies to whip up some super easy grilled meals. When you start grilling, make an event out of it – play games, toss a Frisbee, go for a swim. When the food is done, dine outside and enjoy the fresh air. I can guarantee that everyone will remember it as the best part of the trip.

Sweet Potato and Pepper Packet
Ingredients:
| 2 medium dark-orange sweet potatoes, peeled and cut into 1-inch pieces |
| 1 medium yellow bell pepper, cut into 1-inch pieces |
| 2 tablespoons butter or margarine, melted |
| 1 tablespoon honey |
| 1/2 teaspoon seasoned salt |
| 1 tablespoon chopped fresh chives |
Directions:
| Heat coals or gas grill for direct heat. Cut 18×18-inch piece of heavy-duty foil; spray with cooking spray. Place sweet potatoes and bell pepper on center of foil. | |
| Mix butter, honey and seasoned salt in small bowl. Drizzle over potato mixture; stir to mix. Fold foil over vegetables so edges meet. Seal edges, making tight 1/2-inch fold; fold again. Allow space on sides for circulation and expansion. | |
| Cover and grill packet over medium heat 15 to 20 minutes or until sweet potatoes are tender. Place packet on serving platter. Cut large X across top of packet; unfold foil. Sprinkle with chives. | |

Try fresh fruit; veggies; cheese and whole-grain snacks and crackers or a sandwich; add a few chilled bottles of water and you will be ready for the road.
