Sweetpotato Hash Egg Cups

Developed by Fit Foodie Finds, these epic egg cups are perfect for mornings on-the-go – coffee mug in one hand, egg cup the other.

Ingredients
  

  • ½ cup sweetpotato grated
  • ¼ cup cheddar cheese shredded
  • 8 eggs large
  • salt & pepper to taste

Instructions
 

  • Preheat oven to 375ºF and spray a muffin tin with cooking spray so clean up is easy!
  • Peel and grate a medium sweetpotato (½ cup)
  • Place ½ cup grated sweetpotato, ¼ cup cheddar cheese, and ½ tablespoon garlic powder in a bowl and mix until combined.
  • Using scoop ⅛ cup or two heaping tablespoon of sweetpotato mixture on the bottom of 8 muffin tins.
  • Crack a large egg on top of each cup and season with salt and pepper to taste.
  • Bake eggs at 375ºF for 13-15 minutes or until eggs are at desired consistency.

TIPS

  • Reheat the next day in the microwave on high for 30-60 seconds.
