Dog-Friendly Sweetpotato Pancakes

Ingredients
  

  • 1 ½ large sweetpotatoes
  • 1 cup powdered oats
  • 1 tbsp baking powder
  • 1 egg
  • ½ cup water
  • whipped cream

Instructions
 

  • Start with the oats in a food processor. Puree into a powder. Place in a bowl
  • Add dry ingredients. Whisk together. Set aside.
  • In a separate bowl, add the rest of the Sweetpotatoes. Beat with a mixer until creamy.
  • Add an egg and water to the sweetpotato mixutre. Whisk until creamy.
  • Add the dry ingredients and mix. The consistency should allow you to roll the dough into a ball.
  • Heat a skillet on the stove.
  • Roll and smash the pancake balls and place in the skillet. Heat on medium for 4 minutes on each side.
  • Top with Whipped Cream.
  • Enjoy!
