Celebrate the Fiesta de Camotes this September!

There’s no better to celebrate the start of a new month (and almost new season) than with sweetpotatoes! This September, the North Carolina SweetPotato Commission is excited to announce Fiesta de Camotes, or Celebrating Sweetpotatoes, highlighting Hispanic restaurants and bakeries throughout North Carolina featuring sweetpotatoes in a special dish, and is just in time for National Hispanic Heritage Month. Pacific Burritos

Fast food burritos have nothing on this loaded meal! Slightly sweet meets savory with roasted pork, refreshing salsa and slightly sweet taters. This recipe was created by Neo Burrito in Asheville, North Carolina.

Dirty South Nachos

We’ll always be suckers for a delicious plate of nachos, and we think it’s a sign that these came just in time for the kickoff to football season! Use baked or fried sweetpotato chips and this dish is one to remember. Created by Crafted: The Art of the Taco in Greensboro, North Carolina.

Sweetpotato Tamales

Tamales are traditionally known as a holiday treat, but we’re believers that you can make these guys all year round! Chef Ambassador, Norma Kessler, from Raleigh, North Carolina kicks up a normal tamale by adding sweetpotatoes to the masa for a creamy, sweet bite.

Sweetpotato Enchiladas

As soon as we saw these enchiladas, we knew we wouldn’t be able to get enough! The ancho sauce and poblanos add a smoky flavor perfectly cut by the sweetpotatoes. Once you try this recipe from Chupacabra Latin Café in Wilmington, North Carolina your enchiladas will never be the same.
