Hot Sweet Potato Soup for a Cold Day

 
The weather has turned dramatically here in the past week.  Just a few days ago, it still felt like Summer, now suddenly it seems like Winter is right around the corner.  As the chilly nights begin to settle into North Carolina, I find myself looking for something warm and comforting.  In my family, cold weather is soup weather.  There is something soothing about a nice bowl of hot soup that warms you from the inside out.

Sweet Potatoes easily lend themselves to soup, with their rich creamy texture. Soup has been featured in the Sweet Bytes blog before, like the delicious Nutty Vanilla Sweet Potato+Kale Soup that our frequent guest blogger, Kath Younger, shared with with us. But I was in the mood for something a little different. This Quick Sweet Potato Soup has a flavor that makes it seem more complicated than it really is. The natural sweetness of our sassy sweets contrasts with tart lime juice to create a taste sensation that your mouth will not soon forget.

Best of all, with only 6 ingredients, you can make it in about 30 minutes.  Then comes the fun part, customize with your favorite add-ins.  A little curry powder adds a spicy kick.  Bacon or pancetta is always wonderful with Sweet Potatoes.  Leeks, or Scallions add a wonderful zesty flavor.  Black beans, roasted chicken, chorizo…the possibilities are endless!!  Give it a try, I promise you won’t be disappointed.

Quick Sweet Potato Soup

  • 6 medium sweet potatoes, peeled and chopped
  • 1 tablespoon minced fresh ginger
  • 2 cups chicken or vegetable stock
  • 1 cup water, or as needed
  • 1 lime, juiced
  • 2 cups milk or cream, or as needed
Directions
  1. Place potatoes and ginger in large saucepan. Pour in chicken stock and water, and bring to a boil over high heat. Reduce heat to medium low, cover, and simmer until the potatoes have softened, about 30 minutes.
  2. Puree potatoes and lime juice in a food processor, or with a hand blender until smooth. Return soup to saucepan and stir in milk or cream as desired; heat until warmed through. 
  3. Serve garnished with cilantro, or your favorite add-in.
