A Sweet Cinco de Mayo
I know, I know, Cinco de Mayo is all about avocados, margaritas, tacos and salsa but as it turns out, in certain regions of Mexico, sweet potatoes play a big role in the cuisine. Sweet potatoes were very important in the Mayan diet and were used to extend their corn-based dishes when corn was scarce.
