Sweetpotato Recipes For Thanksgiving
From all the chatter surrounding Thanksgiving, I think it’s safe to say that this coming holiday ranks high on ‘favorite holiday’ lists. Can you guess why? The food, of course! Every November, we look forward to Thanksgiving classics such as juicy turkey, Mom’s stuffing, jiggly cranberry sauce, crispy Brussels sprouts and of course, good ol’ sweetpotatoes.
Our office is doing Thanksgiving early and having a potluck lunch tomorrow. Everyone signed up to bring a different side without revealing what exactly they’ll be doing to it. What did I sign up for? You guessed it! This year I am making Bourbon Sweetpotatoes (photographed above) from Martha Stewart’s Everyday Food. I indulge in the natural sweetness of sweetpotatoes year round but for Thanksgiving I get right on theme and whip out my molasses-laced brown sugar for a decadent side of my favorite vegetable.
Ingredients
- 3-1/2 pounds sweetpotatoes, peeled and cut into 1-inch wedges
- 1/2 cup packed dark-brown sugar
- 2 tablespoons bourbon, or more to taste :)
- Coarse salt and ground pepper
- 3 tablespoons butter, room temperature
Directions
- Preheat oven to 350 degrees.
- Arrange sweetpotatoes in a 9×13 inch baking dish. Add sugar and bourbon; toss to combine; season with salt and pepper.
- Bake until sweetpotatoes are tender and glazed, about 1 to 1-1/2 hours, tossing everything 30 minutes.
- Stir in butter before serving.
