Sweetpotato Mugcake is a quick, single-serve dessert made with oat flour, mashed sweetpotato, nut butter, and maple syrup. Microwaved in minutes, this soft, protein-packed treat can be topped with chocolate chips, fruit, yogurt, or ice cream for an easy and satisfying sweet snack.

Ingredients

  • 3 Tbsp oat flour
  • 1.5 Tbsp peanut butter or almond butter
  • 2 tsp maple syrup
  • ¼ cup mashed sweetpotato
  • 2 Tbsp almond milk
  • 1/4 tsp vanilla extract
  • ½ tsp baking powder
  • Pinch of salt
  • Mini chocolate chips optional

Instructions

  • Mix all ingredients in bowl and transfer to a greased mug or ramekin.
  • Microwave for 75-90 seconds each. Microwave strength varies, so adjust accordingly. If you like your cake softer, cook for less time. Allow to cool for 3-5 minutes before eating.
  • Enjoy – pair with ice cream, yogurt, more chocolate chips, fruit, etc.
