For the Loaf
- 1/3 cup milk
- 1 cup mashed cooked sweetpotatoes
- 3/4 cup canola oil
- 2 large eggs
- 1 1/2 cups white sugar
- 2 cups all-purpose flour
- 1 1/2 tsps baking powder
- 1 tsp ground cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp salt
For the Ganache
- 1/2 cup semisweet chocolate chips
- 1/2 cup heavy cream
For the Loaf
Preheat oven to 350F.
In a large bowl, blend the milk, sweetpotatoes, and canola oil. Blend in the eggs.
In a separate bowl, combine the sugar, flour, baking powder, cinnamon, nutmeg and salt.Pour the dry ingredients into the wet ingredients and blend until smooth.
Pour the batter into a greased loaf pan. Bake for 1 hour or until a toothpick inserted into the center of the loaf comes out clean.
Let cool in a wire rack completely.
For the Ganache
Bring the heavy cream to a simmer in a small pot.
Immediately remove the heavy cream from the heat and pour it into a glass bowl along with the chocolate chips.
Let the milk and chocolate chips sit for 3-4 minutes. Then stir until smooth and creamy. Pour the ganache over the cooled sweetpotato loaf.
