Ingredients

  • ¼ cup oats
  • ¼ cup coconut milk
  • ¼ cup water
  • ¼ cup cooked sweetpotatoes diced
  • ½ cup blueberries

Instructions

  • Combine all ingredients in a microwave safe bowl.
  • Microwave until oats are cooked and sweetpotatoes are hot, about 2-3 minutes depending on your microwave’s power
  • Sprinkle on optional toppings and serve immediately

Notes

Cooking notes: Fresh, frozen or dried blueberries all work well.
