  • 1 lb salmon
  • 2 ½ cups chopped NC sweetpotatoes
  • ½ lb fresh green beans
  • 2 tbsp olive oil
  • Salt
  • Pepper
  • Fresh thyme

  • Preheat the oven to 425F. Line a rimmed baking sheet with parchment paper. Place sweetpotatoes and green beans on the baking sheet. Drizzle with 1 tbsp olive oil and season with salt and pepper.
  • Bake sweetpotatoes and green beans for 10 minutes. While veggies cook, prepare the salmon. Season with salt and pepper and rub with remaining olive oil. Garnish with fresh thyme.
  • After ten minutes, push the sweetpotatoes to one side and green beans to the other. Place the salmon in the middle.
  • Return to the oven and bake for 15 minutes. Remove from the oven
