Slice the sweetpotoates in thin 1/4” strips.
Soak in cold water for 1 hour.
Preheat oven to 425 F.
Drain the fries and dry them off with a paper towel. Then add oil, cornstarch, salt and pepper.
Add fries to parchment paper and bake in the oven for 20-25 minutes or until crispy and golden brown.
