Sweetpotato Mango Sangria Popsicle

Ingredients

  • ¼ c sweetpotatoes cooked, cooled and mashed
  • ½ c mangos diced
  • ½ c pears diced
  • 1 c mango seltzer
  • 1 Tbsp strawberries diced

Instructions

  • COMBINE all ingredients in a blender, except diced strawberries.
  • BLEND until icy consistency.
  • POUR into popsicle molds. If desired, you can add reserved diced fruit (including strawberries) in the molds.
  • FREEZE 2-3 hours or overnight until solid.
  • SERVE as or in a glass of wine (rosé or sauvignon blanc) or your favorite juice/seltzer.
