- ¼ cup oats
- ¼ cup coconut milk
- ¼ cup water
- ¼ cup cooked sweetpotatoes diced
- ½ cup blueberries
- Optional Toppings: Ground cinnamon, maple syrup, cocoa powder, toasted nuts or seeds
Combine all ingredients in a microwave safe bowl.
Microwave until oats are cooked and sweetpotatoes are hot, about 2-3 minutes depending on your microwave’s power
Sprinkle on optional toppings and serve immediately
Cooking notes: Fresh, frozen or dried blueberries all work well.
