BBQ Sweetpotato Shepherd's Pie

For filling:

  • 1 ¼ lbs lean ground beef ground turkey or plant based protein can be used
  • ½ small onion diced
  • 10 oz frozen mixed vegetables
  • 1 ½ tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • cup bbq sauce
  • 2 tbsp all-purpose flour
  • 1 cup beef broth
  • 1 ½ cups shredded cheddar cheese

For sweetpotatoes:

  • 2 lbs sweetpotatoes peels and cubed
  • 3 tbsp butter
  • cup milk
  • ¼ cup sour cream
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tbsp dried parsley

  • Pre-heat oven to 350°F.
  • In a rimmed skillet, brown ground beef with diced onion. When beef is cooked and onion is tender, drain and excess grease from the pan. Add mixed vegetables, salt, pepper, garlic powder, onion powder, BBQ sauce, flour, and broth. Allow the mixture to simmer for 3-4 minutes and thicken.
  • While the mixture thickens, prepare the sweetpotatoes. Boil in water till fork tender. Place sweetpotatoes in a mixing bowl. Add the butter and mix using a hand mixer. Add the milk and sour cream. Beat the sweetpotatoes on high until smooth and light. Season with salt and pepper.
  • Add the beef mixture to a 9x13 casserole dish. Top with shredded cheese. Spread the sweetpotatoes over the beef mixture. Top with dried parsley. Bake uncovered for 30 minutes. Remove from the oven and allow the shepherd’s pie to rest for about 5 minutes. Serve.
