Preheat oven to 350℉ and line an oven tray with baking paper. Beat the butter, brown sugar and vanilla extract in a bowl until combined.
Slowly stir in sifted flour, ground ginger, ground cinnamon, baking powder, baking soda and mashed sweetpotato.
When all ingredients are combined, add the milk chocolate chips and toasted/shredded coconut and work it into the dough.
Place one tablespoon of mixture onto the lined oven tray each approximately 4 inches apart.
Once the tray is full, bake the cookies for 12-15 minutes and once cooked, allow to cool.
Using a small amount of warm melted dark chocolate, secure two Whoppers per cookie to form the spider’s body and head.
Using a piping bag, create four lines of melted dark chocolate on each side of the cookie to form the spider’s legs.
Stick on candy eyeballs with remaining melted chocolate and serve.
