Sweetpotato Spider Cookies

Ingredients

  • ½ C cooked mashed sweetpotato
  • ½ C butter
  • ¾ C brown sugar
  • 1 tsp vanilla extract
  • 1 C flour sifted
  • ½ tsp baking soda
  • ½ C milk chocolate chips
  • C coconut Dried, toasted and shredded
  • ½ tsp ground ginger
  • ½ tsp ground cinnamon
  • 48 malted milk balls (whoppers)
  • 48 candy eyeballs
  • ½ C dark chocolate

Instructions

  • Preheat oven to 350℉ and line an oven tray with baking paper.
  • Beat the butter, brown sugar and vanilla extract in a bowl until combined.
  • Slowly stir in sifted flour, ground ginger, ground cinnamon, baking powder, baking soda and mashed sweetpotato.
  • When all ingredients are combined, add the milk chocolate chips and toasted/shredded coconut and work it into the dough.
  • Place one tablespoon of mixture onto the lined oven tray each approximately 4 inches apart.
  • Once the tray is full, bake the cookies for 12-15 minutes and once cooked, allow to cool.
  • Using a small amount of warm melted dark chocolate, secure two Whoppers per cookie to form the spider’s body and head.
  • Using a piping bag, create four lines of melted dark chocolate on each side of the cookie to form the spider’s legs.
  • Stick on candy eyeballs with remaining melted chocolate and serve.
