Peel sweetpotatoes and spiralize them using a spiralizer to pasta size and style of choice.
In large pan, sauté olive oil over medium high heat. Add garlic cloves and diced onion. Cook for 3-5 minutes or until onion starts to look translucent.
Add in spiralized sweetpotato. Cook for 10-15 minutes over medium-high heat, or until sweetpotatoes soften and are cooked through.
Add in black beans, salt, pepper, paprika and Italian seasoning and mix.
Add in shredded cheese, stirring, and turn off heat.
For the sauce, start by microwaving your sweetpotato for 7-8 minutes or until soft. Take the mash filling out and separate from the skin. Mash and mix in a bowl with milk and tomato sauce to desired consistency. Use an immersion blender if necessary.
