Sweetpotato Smoothie Cubes

Sweetpotatoes are a shockingly good base for smoothies– they’re full of antioxidants like vitamin A and vitamin C and they’re a good source of fiber. Plus their sweet flavor pairs perfectly with other nutrient-rich ingredients like berries!
Prep a batch of these smoothie cubes by blending everything up, freezing into ice cube trays and have them ready to go when you need them!

- 2 sweetpotatoes
- 2 cups blueberries fresh or frozen
- 2 cup strawberries fresh or frozen
- 1 cup plain Greek yogurt
- 1 cup baby spinach or kale
- 1 cup coconut water or coconut milk for a creamy version
- 2-3 tbsp honey optional or a sugar-free sweetener like monk fruit or Stevia
Preheat oven to 425F. Pierce sweetpotatoes with a fork.
Bake in the oven for 40-50 minutes until easily pierced with a fork.
Allow to fully cool and then peel and slice into chunks.
In a blender, add sweetpotatoes, blueberries, strawberries, Greek yogurt, greens, coconut water and sweetener if desired. Blend until smooth.
Add to ice cube tray and freeze at least 4 hour or overnight.
When ready to make into smoothies, add a splash of liquid and blend until smooth.
