- 2 cups mashed sweetpotatoes (about 2 medium sweet potatoes)
- ⅓ cup cornstarch
- 1 tsp garlic powder
- 2 tbsp grated Parmesan cheese
- Olive oil for tossing
- Optional toppings: Additional grated, Parmesan Chopped fresh parsley
Cook the sweet potatoes: Peel and chop the sweet potatoes. Place them in a large pot, cover with water, and bring to a boil. Cook until fork-tender, about 10 minutes. Drain well and mash until smooth.
Make the dough: In a large bowl, combine the mashed sweetpotatoes, cornstarch, garlic powder, and Parmesan. Mix until a soft dough forms.
Shape: Roll the dough into bite-size balls (about 1–1½ tablespoons each).
Air fry: Lightly toss the balls with olive oil. Air fry at 425°F for 15 minutes, shaking halfway through, until golden and crisp.
Finish & serve: Top with extra Parmesan and parsley if desired. Serve warm.
