Garnished with diced roasted sweetpotatoes, this mocktail is both refreshing and playful, and a smart way to meal prep sweetpotatoes for multiple uses throughout the week.
2Tbsp.sweetpotato date caramel sauceplus more for garnish (recipe in the highlight Latinè Heritage @chefcarlacontreras)
2ginger tea bags
1/4cupboiling water
1cupof crushed ice
1limejuiced
3/4cuporange juice
2–4 dashes orange bitters
Pineapple sodato top off
1Tbsp.flaky sea salt
diced roasted sweetpotatoesgarnish

Pour boiling water over the tea bags and honey. Add a lid or small saucer on top of the mug and steep for three minutes before removing the ginger tea bags.
On one side of your glass, use a pastry brush to add a swipe of the sweetpotato date caramel sauce. Coat the area in salt by carefully rolling the glass on the sticky side.
Add the ice, cooled tea, and orange juice to a large glass. Top with your favorite ginger soda and stir. Garnish with diced roasted sweetpotatoes.
