Sweetpotato Chocolate Fudgsicles

Combining chocolate, peanut butter and sweetpotatoes in our opinion creates a snack that is both delicious and nutritious! These yummy snacks support children's groth, brain development and assist in sustaining the energy they expend on hot summer days! Win Win - Sweetpotatoes ~ Any Reason, Any Season!

Ingredients

  • C mashed sweetpotato
  • ¼ C cocoa powder
  • tsp salt
  • 2 tbsp cornstarch
  • ½ C maple syrup
  • C heavy whipping cream
  • C Coconut milk full fat
  • 1 tsp vanilla
  • C milk chocolate chips

Optional Toppings

  • colored sprinkles, chopped nuts, or crushed oreos

Instructions

  • Microwave sweetpotato for 4-6 minutes, until soft. Scoop out the flesh and mash it using your preferred method. (No hand held mixer? Try a potato masher or a just the back of a fork or spoon).
  • Add ingredients (except chocolate chips) to a medium pot over medium-high heat for 5-7minutes. Heat until ingredients meld together and dissolve, stirring occasionally. The mixture will beginto thicken.
  • In the final minute, add chocolate chips and stir until they melted. Remove from heat.
  • Arrange popsicle molds to pour the chocolate pudding mixture into. (Using a a funnel makes for easier pouring).
  • Freeze for 4-6 hours. When removing popsicles from molds, place the mold under warm water for a few seconds until the popsicle moves and releases easily from the mold.
  • Enjoy as is! For an elevated twist, you can also dip in melted chocolate and add sprinkles, crushed oreos, freeze-dried strawberries or chopped nuts.
