Sweetpotato Chaat Roti

Ingredients

  • 2 tbsp extra-virgin olive oil
  • 4 cups North Carolina Sweetpotatoes, cubed
  • 3 tbsp chaat masala, divided
  • 1 cup plain, whole milk Greek yogurt
  • 1 lemon, juiced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 small red onion, finely diced
  • 8 whole wheat roti wraps, warmed
  • 1 cup green mint chutney

Instructions

  • In a large mixing bowl, toss together olive oil, sweetpotatoes and 2 tbsp chaat masala. 
  • Preheat oven to 400 degrees F and line a baking sheet with foil. Place sweetpotatoes on prepared pan and bake for 15-17 minutes, until soft and cooked.  
  • In a medium mixing bowl, whisk together yogurt, lemon juice and 1 tbsp remaining chaat masala.  
  • Add cooled sweetpotatoes, bell peppers, and red onion to a large mixing bowl and toss until well mixed.
  • To assemble roti, place 1 warmed roti on a clean surface. Add 1 tbsp chutney and 1 tbsp yogurt and spread out evenly. Add ½ cup sweetpotato-veggie mixture to the center. Fold each end of the roti towards the center and seal together with toothpicks. Repeat with remaining rotis and filling.
  • Serve warm.
