S'mores Sweetpotato Quesadilla

S’mores Sweetpotato Quesadilla is a fun and easy dessert that layers creamy mashed NC sweetpotatoes with gooey marshmallows and melted chocolate between crispy tortillas. Finished with crushed graham crackers, this playful twist on a campfire favorite is perfect for quick treats or kid-friendly gatherings.

Ingredients

  • 2 6 inch flour tortillas
  • ¼ cup mashed cooked NC sweetpotatoes
  • ¼ cup mini marshmallows
  • 2 tbsp semi-sweet chocolate chips divided
  • 2 tsp crushed graham cracker

Instructions

  • Heat pan to medium-low heat.
  • Spread a layer of mashed cooked sweetpotatoes on the bottom tortilla. Place the tortilla in the pan.
  • Add marshmallows and 1 tbsp chocolate chips. Top with remaining tortilla.
  • Cook for 4-5 minutes. The bottom of the tortilla should be toasted. Flip and cook for an additional 3 minutes. During the last minute of cooking add remaining chocolate chips and crushed graham crackers.
  • Remove from heat and cut into quarters.
