Roasted Blueberry and Goat Cheese Sweet Potatoes combine tender baked sweet potatoes with creamy goat cheese, warm cinnamon, and a touch of honey. Finished with fresh blueberries and lightly broiled until golden, this dish balances savory richness with natural sweetness.   • 4 NC sweetpotatoes
  • ½ cup crumbled goat cheese
  • 2 tbsp salted butter
  • ¼ tsp ground cinnamon
  • ½ tbsp honey + additional for topping
  • ½ cup fresh blueberries

  • Preheat the oven to 350F. Poke holes in the sweetpotato with a fork, then wrap each sweetpotato in aluminum foil. Bake for 45-60 minutes, or until sweetpotatoes are tender to the touch.
  • Remove sweetpotatoes from the oven. Remove the foil and cut each sweetpotato down the middle to help it cool. Allow them to cool so they can be handled.
  • Once cooled, use a spoon to gently scoop out the inside of the sweetpotato, but keep the peel intact. Place sweetpotato in a bowl and add 2 tbsp of goat cheese to the sweetpotatoes. Next, add salted butter, cinnamon, and ½ tbsp of honey. Mash the mixture together till smooth.
  • Use a spoon to put the sweetpotato mixture back in the sweetpotato skins and place on a baking sheet. Top with remaining goat cheese and blueberries. Broil on high for about 5 minutes. Keep a close eye on the sweetpotatoes so they do not burn. They should have some brownness on the cheese and the berries become soft.
  • Top with a honey drizzle and serve.
