- 1 medium sweetpotato
- 2 tablespoon Greek yogurt
- 1 teaspoon harissa oil or to taste
- Sweetpotato Toast with Soy Scallions and Cashews
- 1 medium sweetpotato
- 1 tablespoon soy sauce
- 3 scallions cut in half & grilled (optional)
- Cashews for garnish
Slice sweetpotato lengthwise into planks about 1/4 inch thick. Note: Place in microwave for 10-15 seconds before cutting to make slicing easier.
Place in toaster (or toaster oveon high, toast twice. Note: If using a toaster oven, toast for about 4 minutes, then flip before toasting again.
Allow to slightly cool and top with desired ingredients above.
