North Carolina Sweetpotato Chocolate Mousse blends tender sweetpotato with cocoa, maple syrup, and vanilla for a naturally creamy, chocolatey dessert. Smooth and lightly sweet, this simple mousse can be topped with a thin chocolate shell and nuts for an extra indulgent finish.

- 1 sweetpotato ,peeled and chopped
- 2 tbsp water saved the boiled sweetpotatoes
- 2 tbsp cocoa powder
- 1 tbsp maple syrup, adjust to your preference
- 1 tsp vanilla extract
- 1/4 cup chocolate chips melted with a tsp coconut oil
Peel and chop sweetpotaotes and boil in hot water until soft and tender, about 10 minutes.
In a food processor, add the sweetpotaotes and a little bit of the water saved from boiling the sweetpotatoes (be careful pouring hot food into your food processor. It is safest to wait until it has cooled down a bit).
Add cocoa powder, maple syrup and vanilla extract and blend until smooth and creamy.
Pour into a ramekin and freeze for 1-2 hours until it sets.
Optional: top with melted chocolate and nuts and set in the fridge for another 10 minutes until the chocolate shell hardens.
