Ingredients
- 1 sweetpotato
- 1 sheet puff pastry thawed
- Mozzarella cheese shredded or sliced
- Honey
- Salt to taste
- 1 egg for egg wash
Instructions
Prepare the sweetpotato
Preheat oven to 400°F
Peel the sweetpotato and slice it into thin rounds (about ⅛ inch thick).
Prepare the puff pastry
Unroll the puff pastry on a lightly floured surface.
Cut into equal sized football shapes
Assemble the bites
on a parchement lined baking sheet drizzle a bit of honey.
Lay some cheese on top and then layer sweetpotato slices on top of that before covering with your puff pastry slice.
Egg wash
Crack the egg into a small bowl and whisk well.
Brush the tops of each puff pastry bite with egg wash for a golden finish.
Then add little strips of puff pastry to the top to make a football grip pattern
Bake
Press the edges of the pastry down using a fork.
Bake at 400°F for 15–20 minutes, or until puffed and deeply golden brown.
Finish & serve
Remove from oven and drizzle with a little extra honey if desired.
Serve warm.
