Ingredients
4medium North Carolina Sweetpotatoessliced in half
1cupraw unsalted pistachioschopped
1raw unsalted walnutschopped
¼cuphoney
1tsppure vanilla extract
1/2tspground cinnamon
Instructions
Preheat oven to 400F and line a baking sheet with foil. Lightly spray sweetpotato with cooking spray and place flesh side down on foil.
Bake until thoroughly cooked, about 30 minutes. Prick with a fork to ensure it is fully done.
Remove from oven and cool about 10 minutes.
In a mixing bowl, mix together pistachios, walnuts, honey, vanilla, and cinnamon.
Top each slice of sweetpotato with 1/4 cup baklava filling. Drizzle with extra honey, if desired. Enjoy warm!
