Baby Friendly Pancakes

Did you know you can make a simple pancake recipe for your child with just two ingredients? All you need is a cooked sweet potato and two eggs. Sweetpotatoes are a food that I recommend we all consume more of! They can be an easy first food for baby, all you have to do is mash them and serve pre-loaded on a spoon, or they can be a great pancake or waffle base for a more nutrient-dense breakfast option. They are a good source of fiber, contain tons of Vitamin A, and a good source of potassium among many other nutrients.

Ingredients

  • 2 eggs
  • 1 cup sweet potato
  • 1 tbsp maple syrup for kids 24 months + (optional)

Instructions

  • Add all ingredients into a blender or stir together in a bowl. You want the consistency of the batter to be slightly thick, not completely pureed. Only pulsing once or twice in the blender worked well for me. If consistency is too thin, add 1/4 cup more sweet potato until desired thicker consistency is reached.  
  • Thoroughly grease and heat your cast-iron skillet or pan prior to putting batter in the pan.
  • Watch closely and flip after 2-3 minutes. Cook for an additional 2-3 minutes until the other side is cooked through.  
  • Serve with your desired topping or plain!
