Preheat an oven to 425 º F. Line a baking sheet with parchment paper.
Toss the sweetpotato pieces in olive oil. Season with salt.
1 sweetpotato, 1¼ tbsp olive oil
Spread the sweetpotatoes in an even layer. Bake for about 35 to 40 minutes or until browned and softened, tossing halfway through baking.
To make Hot Honey
Combine the honey and red peppers in a small saucepan.
½ cup honey, 1 tsp crushed red pepper
Bring to a simmer over medium heat.
Once simmered, remove from the heat. Stir in the vinegar.
1 tsp apple cider vinegar
Allow to sit for 1 hour. Strain the honey through a fine-mesh strainer into a small mason jar or container.
Prepare White Sauce
Melt the butter in a medium sauté pan over medium heat.
½ tbsp salted butter
Stir in the flour and cook for 1 minute.
½ tbsp all-purpose flour
Gradually pour in the heavy cream into pan, whisking constantly. If using a non-stick pan, do not use a whisk or will scrape your pan.
½ cup heavy cream
Cook for 3 minutes.
Add the salt and parmesan cheese.
⅛ tsp fine sea salt, ½ tbsp grated parmesan cheese
Reduce heat to low and cook for another minute, or until cheese melts and sauce thickens. Set the sauce aside.
Prepare Sausage
Form the sausage into 1-inch pieces.
4 ounces breakfast sausage
Cook in a medium sauté pan over medium heat for about 3 to 4 minutes or until browned. Flip and cook for another 3 to 4 minutes or until cooked through.
Drain the sausage on a paper towel-lined plate.
Prepare Grill
If using charcoal - prepare charcoal grill and light. If using gas -preheat
Place a pizza stone on the grate of your charcoal or gas grill. Close your hood or place the cover on your grill.
Heat your grill to between 400 - 500°F.
While your grill is preparing, let your dough sit out on the counter for 30 minutes.
Using a pizza peel, sprinkle the cornmeal over the peel. This will prevent the dough from sticking to the pizza stone. (tip if you don’t have a pizza peel)
1½ tsp cornmeal
Roll or stretch out your pizza dough on a floured surface into about a 10-inch thin circle, leaving the sides thicker for the crust.
1 pound pizza dough ball
Place your pizza dough round on the pizza peel.
Top with the white sauce. Spread the ricotta over the sauce. Arrange the roasted sweetpotato pieces and cooked sausage over the top.
3 tbsp whole milk ricotta
Brush the peach slices with olive oil and grill on the grate for 2 to 3 minutes or until grill marks form. Remove from the grill. Add the grilled peach slices to the pizza.
½ peach
Before placing the uncooked pizza on the pizza stone, sprinkle a little more cornmeal over the surface of the pizza stone.
1½ tsp cornmeal
Gently slide the uncooked pizza onto the center of the pizza stone.
Cover your grill and allow the pizza to cook for about 5-8 minutes or until cooked through and lightly browned.
Transfer the pizza to a cutting board. Immediately top with the arugula.
⅓ cup fresh arugula
Drizzle some of the hot honey over the pizza.
Cut into slices and enjoy.
