Dry Ingredients
1.5cupswhite whole wheat flour
2teaspoonsbaking powder
1teaspoonground cinnamon
1/4teaspoonground ginger
1/8teaspoonground allspice
1/8teaspoonsalt
Wet Ingredients
2large eggs
3/4cupunsweetenedplain almond milk
1cupsweet potato puree Make your own HERE.
2tablespoonmaple syrup
1teaspoonvanilla extract
2tablespoonsmelted coconut oil
Instructions
In a medium bowl, mix together dry ingredients. Set aside. In a large bowl, whisk together wet ingredients.
Slowly add wet ingredients to dry and mix until there are no lumps.
Heat a skillet to medium heat and spray with coconut oil cooking spray. Use around a 1/3 cup scoop and pour batter onto skillet. Cook for around 2-3 minutes per side.
