Our Recipes can be prepared with any variety of North Carolina sweet potato. They taste different, some are sweeter, more moist and creamy; others dryer and less sweet. Some have a slight nutty flavor. They invite you to experiment and try different varieties to choose the one(s) you like most. Different colors can be mixed and used to make your dishes look pretty. Please consider that the white sweet potato varieties need more cooking time than the orange ones and they may need more liquid to remain moist.
